We can't believe it's February already! According to groundhogs Chuck and Phil, Spring is coming early this year! That makes us happy little Devils, because you know we love the warm toasty oven... we can't take the cold!
  We have been preparing for some upcoming events which we cannot wait to tell you all about. We have also been spending time on some special projects and are working our tails off to make some big changes that will help grow our business. Our goal for 2013 is to spread the word about Cake Devils and obtain new customers. Have you enjoyed our cake, either for it's delicious taste, it's artistic beauty or better yet, for both? Then please, tell a friend. We can't tell you how much we appreciate your word of mouth business!  Stay tuned for a couple of exciting projects coming to your inbox soon! New Class Information

January Classes Sold Out Fast! Sign up for February Now!

Hope you are all recovered from the busy holiday season and getting back into the swing of everyday life. Cake decorating classes resume next week. This month I'll be teaching course 1, Decorating Basics and course 3, Gum Paste and Fondant. Both these classes sold out fast! 

I just posted the dates for February. So if you feel like taking a shot at the sweet basics of cake decorating, course 1 will be offered on Monday nights. It teaches you the foundation of decorating so that you can then move on to the next 3 courses. By the end of the 4 weeks, you'll be able to bake, fill, ice and decorate a cake!

Really?? The holidays are here already??? Where does the time go?
Wow! It's been a whirlwind for the Cake Devils!!! We've been BUSY Little Devils!!! We have lots to be thankful for and lots to share with you. We'll try to keep this short and sweet, but it's not going to be easy! This Holiday Newsletter is jam packed!!!

First we want to talk about the Orange County Partnership Annual Event which took place at Anthony's Pier 9 the beginning of this month. What an amazing opportunity that was for us! We would like to extend a great big THANK YOU to everyone at the Partnership for the fantastic opportunity. We are so proud of the amazing replica of the Mediacom building that we made as the centerpiece for this incredible, almost 600 person event! We also want to extend great thanks to Mediacom for getting us the photos and blueprints of the building which allowed us to create the building to scale. In addition, we have to thank Ryerson Studio for the YouTube video of the model they created, which we watched thousands of times while constructing our replica!
(Check out Mike DelPriore's video here.) This, by far, was our largest (and most intense) project yet! On the night of the event, everything went off without a hitch. We successfully delivered the Mediacom building (that was too big to fit through a door), a ton of cake, 32 pounds of sauces and 10 pounds of sugar shards. We had a fantastic evening, met some AMAZING and INCREDIBLE people, and watched with glee as almost 600 people enjoyed our Devils Food Cake with Chocolate Butter Cream, Pumpkin Spice Cake with Cinnamon Cream Cheese Icing and Baileys Irish Cream Cake with Baileys Buttercream. We're still ecstatic from the rave reviews! :D

Congratulations once again to Mediacom on winning the Golden Shovel Award!

As we came down from that sugar high, quite a few days were filled with spicy Gingerbread, rather than cake, especially for Cake Devil Stacy! As you may know, Cake Devil Stacy teaches Wilton Method Cake Decorating Classes at the Michaels in Ramsey. More information can be found here. In preparation for teaching a gingerbread house class, I created an entire gingerbread village and did a gingerbread house demo at the store! This was quite a different experience from doing cakes!

Then we received an invitation (ok, request for help) from a friend who is a member of the Artists In the Park for Cake Devils to join them as mentors at The Bear Mountain Inn as they created Gingerbread Houses to be raffled off for the holiday season. The day was a lot of fun and we met some wonderful people and made some great contacts!!! The Bear Mountain Inn recently reopened after 7 years, and it's absolutely beautiful. We highly recommend checking it out! The Artists are a group of really great people and did a fantastic job!! Check out their work:

With the holidays upon us, we hope that you are all as excited as we are for this festive season. It’s our first holiday season as Cake Devils and as we look back upon this past year, we are overwhelmed with joy by all of the support that we have received. From the start we have had many opportunities to provide the service and product that we love most...delicious and exquisite cakes! All year long, we have been fortunate to help you celebrate many birthdays, showers, weddings and other joyful occasions. The feedback we have received has been uplifting and amazing and we couldn't be more appreciative. Equally exciting were the events we were able to partake in, such as the People to People fair, the Wedding Wire Networking Event, Anthony's Pier 9 bridal show, and, we’re thrilled to have become active members of the Wedding Vendors of the Hudson Valley, just to name a few. These opportunities have allowed us to share our unique products and services and have provided us the chance to meet people who have been able to help us grow and develop our business. We cannot thank you enough...and we are really excited for the plans we have in the works for the new year. We have some big changes coming and some exciting things happening! We thank you for all you have shared with us this year.

Of course, this wouldn’t be our newsletter if we didn’t share some recent cakes with you!

Although we have had a bit of a rough week, we still managed to do a little baking for some small orders this weekend! And of course before the storm hit, we had some delicious creations that we are excited to share with you.

We hope November brings a speedy recovery to those who suffered a loss from the storm and much to give thanks for to the rest of us. Our hearts go out to those of you who still may be without power or recovering from this hurricane. With Thanksgiving approaching, we'll be baking up lots of Triple Chocolate Pumpkin Cheesecakes, Pumpkin Cheesecakes, Pumpkin Pies and cakes, but we, like you, look forward to being surrounded by our friends and family and we are ever so thankful for the people in our lives and the food on our tables. We hope you all stay safe and warm in the weeks to come.  If you have any special events planned, just relax...we'll do the baking.  ;-)

Take a Cake Decorating Class Before the Holidays!

Impress your friends and family and learn a little cake decorating before the holidays! The classes are fairly small and the students are having a blast! The basic courses consist of 4 courses, each course has 4 lessons. So there's a total of 16 lessons. Once you take Course 1, Decorating Basics, you can then you go out of order and take whichever classes you would like.
It's amazing to see what some of my students have accomplished after only course 1!


In addition to the 4 courses, there's some 1 day project courses coming up in December!

Dark Pumpkin Pie

Why is your Pumpkin Pie so dark?

With the leaves on the trees changing color and beginning to fall, it's safe to say that pumpkin season is in full swing. I personally LOVE pumpkin season! I love pumpkin anything... pumpkin coffee, pumpkin bread, pumpkin pie, pumpkin cake, pumpkin muffins, pumpkin cheesecake, triple chocolate pumpkin cheesecake... you get the point. And with the exception of the coffee, I make all of the above from scratch with fresh and fine ingredients.

But this blog post in particular is about Pumpkin Pie, so let's get back on track. I make a rich, delicious pumpkin pie. But I find that I am sometimes asked why my pumpkin pie is so dark. Until recently I never really gave it much thought or realized that it looked dark to the average person. Ironically though, everyone that questioned the color was also unbelievably pleased with the taste of the pie. They rave about how great it is.

Well, I recently discovered the answer to this question. I have this little warm spot in my heart for Produce Pete, who I occasionally catch on a rare Saturday morning, and he recently did a segment on winter squash. When he got to butternut squash, one of the things he said is that many commercial bakeries actually use butternut squash instead of pumpkin to make pumpkin pie! I was floored! I never ever knew this. Now don't get me wrong, I love butternut squash, and make a killer butternut squash soup, but I'm not going to put it in a pie and tell you it's pumpkin! So, there you have it... my pumpkin pie is so dark because it's made with actual pumpkin! Go figure!

Tips for Planning Your Wedding Cake

The best time to start planning your wedding cake is right after your venue is booked and your wedding theme and colors are decided upon.

WHO is going to create your delicious work of art? There are two types of places that you can look for when searching for the right Cake Artist for you. One is a bakery. Many bakeries, while their main business is pastries, small cakes, and cookies being sold in the store front, typically also create wonderful wedding and specialty cakes. The other type of business, which is what we here at Cake Devils are, is a Custom Cake Artist. We are a fully licensed and insured, solely custom, made to order cakery.  Everything we make is baked fresh, from scratch, in small batches with high quality ingredients, just before you need your order. While we are extremely easy to contact and work with, you can only meet with us in person by appointment. This is because we are a 2 person operation and give every order all the time, love and attention that it needs and deserves. This means, when we are creating your delicious, beautiful, masterpiece of a wedding cake, we won’t be interrupted. Our full focus will be on your cake.

The second step to planning ahead is the DESIGN of your cake. If you already have some ideas, then you’re ahead of the game. Tell your cake artist your thoughts. Here at Cake Devils we’re great at taking your ideas and turning them into a fabulous cake! If you don’t have any ideas yet, start looking on-line. Create a folder of cakes you like. Do you see a trend? Is there something about all the cakes that you like that is consistent? Email some of these pictures to your cake artist. Let them see what you like!

Long gone are the rules of traditional wedding cakes. So, be creative, express yourself. Do you want to incorporate your wedding colors? How about replicating some of the fabric, pearls or jewels on your dress? Do you want your cake to be a color instead of white? Do you like the more traditional all white cake with scrolls and piping? You can do whatever you’d like. Do you like a lot of flowers on your cake or a more minimal approach? Or you can even do a cake like the one seen below, covered in all rosettes.

Speaking of flowers, real flowers or sugar flowers? Here at Cake Devils, we highly recommend any type of sugar flower. Real flowers are beautiful; your florist adds so much beauty to your wedding day, however, fresh flowers are not a food product, and may contain things like pesticides or contaminants that can then get on your special cake and then into the mouths of your guest. Sugar flowers are beautiful and edible and come in the form of Buttercream (soft and buttery), Royal Icing (hard and crunchy, like a candy dot), and Sugar Paste (dry like porcelain and are the most realistic of them all, many people think they are real.)

THEME cakes are huge. We’re seeing a big trend of GROOMS CAKES hitting our area. Grooms Cakes have been around in the south, but it seems that couples in our area want a theme cake at their wedding now too! What a great way to express a hobby or a love for something with an amazing specialty cake at your wedding to go with your wedding cake! Your wedding cake artist should be able to provide and deliver both of these cakes for you.

One thing more to keep in mind, is that you don’t want too many opinions. Ask only a few of the people closest too you.  You’ll notice that here at Cake Devils, we hold tastings for up to 4 people. This is because too many people bring too many opinions. It can make you second guess yourself and your choices. Feel good about the decisions you make in planning your wedding. It’s your day!

The very last and most important step after you’ve booked your cake is to love what you’ve decided on and feel great about it! Cake is happy, delicious and beautiful! Trust Cake Devils (or your chosen cake provider) to deliver your Delicious Masterpiece and amazing Grooms Cake on your special day!
